Four new University Commons tenants announced

Fresh To Order, pioneer of the innovative, “fast-fine” concept to open first restaurant of its kind in Knoxville

KNOXVILLE, Tenn. Yesterday, developers announced four new tenants – Fresh To Order, Blush Boutique, Great Clips, and Jersey Mike’s – had been added to University Commons, Knoxville’s first urban, vertical retail center located adjacent to the University of Tennessee campus.

According to Mike McGuffin, partner with CHM, LLC, the Knoxville-based real estate development firm behind University Commons, Fresh To Order, will bring a new restaurant concept to the Knoxville market while neighboring tenant, Blush Boutique, will also be new to the area. “We are excited to announce the addition of these new tenants to University Commons and believe they will greatly compliment this center. We’ve been very pleased with tenant interest and more announcements are forthcoming,” said McGuffin.

Fresh To Order

“We’re very excited about bringing Fresh To Order to Knoxville,” said Craig Mason, owner of Fresh Concepts, LLC, the Knoxville Fresh To Order franchisee.  “Our restaurant’s a perfect option for anyone looking to enjoy a fresh and affordable meal without having to sacrifice quality and flavor.”

Mason explains that already an experienced local multi-unit foodservice operator, Fresh To Order fills a growing demand for flavorful food within the price points of $9-$11.  “Whether you want a salad or something heartier like our long plates, we offer a variety of flavorful dishes made with the best ingredients.”

Mason selected University Commons as his first location in the Knoxville market because of its proximity to the demographic profile of the target Fresh To Order guest.

“‘Fast-fine’ combines the quality of food found in casual fine dining with the operating platform and price point of fast casual,” explains Mason.

Quickly becoming one of the industry’s most admired concepts, the Fresh To Order brand was recently named one of Nation’s Restaurant News “Top 50 Breakout Brands,” QSR Magazine’s “Best Franchise Deals,” and NRN’s “Hot Concepts.”

Blush Boutique

According to regional manager Whitney Wolfe, Blush Boutique is based on the “unique.affordable.fashion” concept offering a one-of-a-kind shopping experience that is continually evolving with the most unique, fashion-forward designs at an affordable price.

“We offer an expansive variety of styles and sizes of clothing, shoes and accessories at prices not found in the average boutique,” said Wolfe.  “From our cutting-edge private labels to the recognizable designers, there is always something new at Blush Boutique as we receive more than 80 new style shipments a week.”

Great Clips

Don and Laura Elliott explain that the University Commons’ Great Clips will be their 20th Knoxville-area location as it joins a network of more than 3,300 Great Clips salons across North America.

“We have been looking forward to opening a location in this area for some time,” said Don.  “The University Commons location will give us an opportunity to make Great Clips more convenient to our University of Tennessee customers and we believe our online check-in app will fit these students’ busy lifestyles by making it easy for them to walk-in and get a great haircut without a wait.”

Jersey Mike’s

According to Harold Wood, Jersey Mike’s director of operations, the restaurant is a fast-casual sub sandwich franchise with more than 1,300 locations open and under development nationwide and is built on the premise that making a sub sandwich and making a difference can be one and the same.

“Jersey Mike’s offers a ‘sub above,’ serving authentic fresh sliced subs on freshly baked bread – the same recipe it started with in 1956 – and we’re passionate about giving back to our local communities,” said Wood.  “I believe our subs are the best in the country and we’re looking forward to bringing that delicious taste to the residents of Knoxville.”

About University Commons

University Commons is a retail center encompassing 12+ acres and comprised of 211,000 square feet of retail space and parking.  Both of the development’s anchor tenants, Wal-Mart and Publix, are scheduled to open later this summer.

University Commons is being developed by CHM, LLC, whose principal partners are Budd Cullom, Jim Harrison and Mike McGuffin. These three veteran developers bring many years of retail experience to this project. Collectively they have developed over 10 million square feet of retail projects throughout the Southeast for such tenants as Walmart, Target, Home Depot, Lowe’s, Kmart, Best Buy and many others. CHM is also responsible for the redevelopment of Northshore Town Center in West Knoxville.
